Waffles with Pecan-&-Apple-Studded Maple Syrup

Light, fluffy waffles make the perfect holiday breakfast or brunch. The pecans and apples in the syrup add wonderful sweetness and crunch.

Ingredients
1 3/4 cups all-purpose flour
1 tablespoon baking powder
1/4 teaspoon salt
2 eggs
1 cup milk
3/4 cup half-and-half
1/2 cup Carapelli Extra Light Olive Oil

Cooking Directions
In bowl, combine flour, baking powder and salt. Make a well in the center of the dry mixture; set aside. In a mixing bowl, beat eggs slightly. Beat in milk, half-and-half and olive oil. Add egg mixture all at once to dry mixture. Stir until just moistened (batter should be lumpy). Pour 1-1 1/4 cups batter onto a preheated, lightly greased waffle iron. Bake according to the manufacturer's directions. When waffle is golden brown and done, carefully remove waffle from waffle iron using a fork. Repeat with remaining batter. Serve waffles warm with Pecan & Apple Studded Maple Syrup (see recipe below).

For Pecan & Apple Studded Maple Syrup:
In skillet, sauté 1 medium apple, peeled, cored and thinly sliced in 1 tablespoon Carapelli Light Olive Oil. Sauté until soft and golden brown. Stir in 1½ cups pure maple syrup and 1/3 cup toasted chopped pecans. Heat syrup until warmed through. Serve with favorite waffles and pancakes.
