Bountiful summer produce shines in this refreshing summer salad.
Ingredients
2 medium cucumbers
1 cup grape tomatoes, halved
1 small green bell pepper, chopped
1 small red onion, thinly sliced
1/3 cup Carapelli Extra Virgin Olive Oil
3 tablespoons sugar
3 tablespoons Carapelli Red Wine Vinegar
3/4 teaspoon salt
1/8 teaspoon fresh ground black pepper
Cooking Directions
Cut cucumbers in half. Remove seeds and slice. In bowl, combine cucumber, grape tomatoes, bell pepper and onion. In bowl, whisk together Carapelli Extra Virgin Olive Oil, sugar, red wine vinegar, salt and pepper. Add dressing to cucumber mixture and toss to coat. Cover and chill salad for several hours. Serves 4-6.
