Pork & Pepper Skewers with Chili Lime Sauce


Ingredients
For Sauce:
1/2 cup fresh lime juice
1/4 cup Carapelli mild olive oil
1 tablespoon granulated sugar
1 tablespoon chopped fresh cilantro
2 teaspoons minced jalapeño peppers

1lb. pork tenderloin, cut into 1-inch cubes
1 large red bell pepper, cut into 1-inch pieces
5 green onions, cut into 1-inch pieces

Preparation Directions
In bowl, combine all sauce ingredients. Chill several hours to allow flavors to blend. Prepare grill. Alternately thread pork, bell pepper and onion onto metal skewers. Season with salt and pepper. Place kabobs on grill and brush with chili lime sauce. Grill over medium-high heat for 15-18 minutes, turning occasionally and basting with chili lime sauce until pork reaches an internal temperature of 155°F. Serves 4. Note: Use this sauce to baste chops or whole tenderloins while grilling.
