Our airy popovers are great served with butter, honey, lemon curd or homemade preserves.
Ingredients
Carapelli Extra Light Olive Oil
2 eggs, beaten
1 cup milk
1 tablespoon Carapelli Extra Light Olive Oil
1 cup all-purpose flour
1/4 teaspoon salt
Cooking Directions
Preheat oven to 400°F. Lightly brush the sides and bottoms of a popover pan or six (6-ounce) custard cups with Carapelli light olive oil. If using custard cups, place on a baking sheet and set aside. In medium bowl, using a wire whip, beat eggs, milk and olive oil until combined. Stir in flour and salt. Fill the prepared cups half full with batter. Bake for 40 minutes or until very firm. After removing from oven, immediately prick each popover with the tines of a fork to allow the steam to escape. Turn off the oven. Return popovers to the oven for 5-10 minutes. Remove from oven and serve immediately. Serves 6.
