Lemon Linguine

This basic summer pasta is plain and simple, yet versatile. You may add any number of ingredients to make it your own. Try adding roasted green beans and grilled chicken breast, steamed shrimp and asparagus or chopped tomatoes, slivered fresh basil and toasted pine nuts or almonds.

Ingredients
1 pound uncooked linguine noodles
1/2 cup Carapelli Mild Olive Oil
Zest from 1 large lemon
Juice from 2 large lemons
1/2 cup chopped green onion
1/4 cup chopped fresh flat leaf parsley
Salt and fresh ground black pepper
Parmesan cheese, to taste

Cooking Directions
Cook linguini in boiling salted water until al dente; drain well. Meanwhile, in bowl, combine Carapelli Mild Olive Oil, lemon zest, lemon juice, green onion and parsley. Add pasta; toss well. Season to taste with salt and pepper. Toss in Parmesan cheese to taste. Serve warm or chilled. If desired, add additional ingredients of your choice. Serves 6.
