
These flavorful kabobs are great served over rice or with pita
bread
Ingredients
1-1/4 lbs. boneless, skinless chicken breasts, cut into 1-inch
cubes
1/4 cup Carapelli extra virgin olive oil
2 tablespoons lemon juice
2 cloves garlic, minced
1 tablespoon fresh chopped mint
1 tablespoon fresh oregano leaves
1/2 teaspoon each salt and ground black pepper
1 medium red onion
1 large yellow bell pepper, cut into 1-inch pieces
Preparation Directions
In large bowl or plastic food storage bag, combine chicken, olive
oil, lemon juice, garlic, mint, oregano, salt and pepper. Let
chicken marinate in refrigerator for 30 minutes. Prepare grill.
Alternately, thread chicken, onion, and bell pepper onto metal
skewers. Discard any leftover marinade. Grill over medium-high
heat until chicken is cooked through, about 10-12 minutes. During
grilling, baste with additional olive oil to prevent chicken and
vegetables from drying out. Serves 4.

Wine Suggestion: Chardonnay or Chenin Blanc
Serving Suggestion
Serve kabobs over a bed of rice. Garnish with fresh mint sprigs,
and sprinkle with crumbled feta cheese.
