Ingredients
1/3 cup Carapelli Premium Extra Virgin Olive Oil
2-3 cloves garlic, minced
1 medium red onion, cut into 6 slices
6 large portabello mushroom caps
6 hamburger buns
1/2 cup mayonnaise
2 tablespoons fresh chopped chives
1 tablespoon Dijon mustard
6 lettuce leaves
2 large tomatoes, each cut into 6 slices
Salt and pepper, to taste
Cooking Directions
Heat grill. Meanwhile, whisk together Carapelli Premium
Extra Virgin Olive Oil and garlic. Brush both sides of onion and
mushrooms with olive oil mixture. Grill onion and mushrooms on
covered grill over medium-high heat for 3-4 minutes on each side
or until tender. Brush cut sides of buns with olive oil and grill
until lightly toasted, about 2 minutes. In small bowl, combine
mayonnaise, chives and mustard. Spread 6 bottom bun halves with
mayonnaise mixture and top with lettuce, onion, mushrooms and
2 tomato slices. Season to taste with salt and pepper and top
with remaining bun halves. Serves 6.
