Your
favorite salsa gives zip to this chilled, tomato-based soup.
Ingredients
3 cups peeled, chopped tomatoes
1 cup prepared salsa, any style
1 cup tomato or vegetable juice
1 cup boiling water
1/2 cup peeled, chopped and seeded cucumber
1/4 cup finely chopped red bell pepper
1/4 cup finely chopped yellow bell pepper
1 tablespoon snipped fresh basil
1 tablespoon Carapelli mild olive oil
1 tablespoon lemon juice
2 teaspoons instant beef bouillon granules
1/4 teaspoon hot pepper sauce
Garnish: Seasoned croutons, sour cream and fresh basil sprigs
Preparation Directions
In large mixing bowl, combine all ingredients. Cover and chill
several hours or overnight. To serve, ladle soup into chilled
bowls or mugs. Top each serving with seasoned croutons and garnish
as desired. Serves 4.
