Lemon Italian Fettuccini


This light spring fettuccini dish makes a great meal with a crisp salad and garlic bread.

Ingredients
1/2 package HORMEL® ALWAYS TENDER® lemon garlic flavored center cut pork loin filet, cut into strips
1 tablespoon Carapelli Extra Light Olive Oil
1 cup shredded carrot
1 cup shredded zucchini
1/2 cup sliced green onion
1 teaspoon chopped fresh oregano leaves or 1/2 teaspoon dried oregano leaves
8 cherry tomatoes, halved
1/2 cup white wine
4 cups hot, cooked fettuccine
1/4 cup shredded Parmesan cheese
Cracked black pepper

Cooking Directions
In large skillet, over medium-high heat, sauté pork in olive oil 4 minutes or until lightly browned. Add carrot, zucchini, green onion and oregano. Cook 4 minutes, stirring frequently. Add tomatoes and wine. Simmer 2-3 minutes or until liquid has been reduced. Toss with pasta. Sprinkle with cheese and cracked black pepper. Serves 4.
