Sweet
and savory, serve this as a salad or as a condiment with meats.
Especially delicious with pork.
Ingredients
1 1/2 cups coarsely chopped fresh cranberries
3 tablespoons granulated sugar
2 tablespoons lime juice
2 teaspoons Dijon mustard
1/2 cup Carapelli Extra Virgin Olive Oil
3 Granny Smith apples, cored, seeded and chopped
1/4 cup sliced green onions
1 cup chopped pecans, toasted
Cooking Directions
In bowl, combine cranberries and sugar. Chill cranberry mixture
overnight. Combine lime juice, mustard and olive oil. Add the
cranberry mixture, apples, green onions and pecans; mix well.
Chill, covered, for 1 hour prior to serving. Serves 6-8.
